Sweet Potato Pie

 

Makes 6 servings
350 calories; 11g fat; 36g carb; 26g protein
36 oz. sweet potatoes, cooked
3 Tbs. unsweetened almond milk
12 slices turkey bacon
4 large eggs
3/4 cup grated parmesan or shredded mozzarella cheese
1/4 cup green onions, sliced
1 tsp. minced garlic
1/4 tsp. cumin
1/4 tsp. sea salt
1. Preheat oven to 425 degrees. Poke holes in sweet potatoes and place on a baking sheet lined with parchment paper. Spray tops with cooking spray and sprinkle with sea salt. Bake for 1 hour, flipping halfway. Remove from oven once soft. Let cool.
2. Turn oven down to 375 degrees.
3. Chop bacon into small pieces and place in a small frying pan over medium-high heat. Cook until crispy.
4. Place sweet potatoes in a large bowl with almond milk and beat until smooth. Mix in all other ingredients (except 1/4 cup cheese) with a hand mixer.
5. Place mixture into a greased, 9x13 glass baking dish. Sprinkle remaining cheese on top. Bake for 30-35 minutes or until edges begin to brown. Enjoy warm with a green veggie of choice.
