Breakfast Sandwich


Makes 1 serving
310 calories; 12g fat; 29g carb; 27g protein
3 oz. sweet potato, grated
1⁄2 cup baby kale, chopped
1 Tbs. @kodiakcakes mix
2 egg whites
Everything seasoning
1 whole egg
1 oz. sliced deli turkey, nitrate-free
1 slice tomato
1 Tbs. cheddar cheese, shredded
1 Tbs. guacamole
Salt and pepper, to taste
Salsa or hot sauce
• Heat waffle iron.
• Grate sweet potatoes into a bowl. Add egg whites, baby kale, Kodiak mix and everything seasoning. Whisk together until well combined. Grease waffle iron well with zero-calorie cooking spray. Spread
sweet potato mixture evenly over the waffle iron and close. Cook 2-3 minutes, then keep warm.
• Heat a frying pan over medium heat and fry a whole egg & deli turkey to your likeness. Place hot egg and turkey inside the sweet potato waffle and top with cheddar cheese, guacamole, tomato, salt & pepper, salsa and/or hot sauce.
