Buffalo Chicken & Pesto Sandwich


Makes 1 serving
350 calories; 13g fat; 32g carb; 25g protein
2 oz. chicken breast, raw
1 Tbs. Frank’s hot sauce
1/8 tsp. dried basil
½ Tbs. pesto sauce
1 Tbs. plain Greek yogurt
1 slices pepper jack cheese
1 multigrain bun
½ tomato, sliced
¼ cup spinach
¼ cup red cabbage
Sea salt & pepper to taste
1. Coat chicken in hot sauce and dried basil. Place in a pan over medium heat sprinkle with salt and pepper. Cover and cook 3 minutes per side or until cooked through. Remove from heat and top with cheese.
2. Combine the pesto sauce and yogurt. Toast the bun then spread the pesto cream sauce on the bottom. Add chicken, veggies and the top bun. Enjoy!
