Salsa Chicken Pile-Up


Makes 2 servings
360 calories; 12g fat; 39g carb; 27g protein
6 oz. chicken breast
1⁄2 cup salsa
1⁄2 cup brown rice, cooked
1⁄4 cup black beans, rinsed and drained
1⁄2 cup red bell peppers, minced
1⁄2 cup yellow onions, minced
2 cups shredded lettuce
2 Tbs. olives, chopped
2 oz. avocado or guacamole
Toppings per serving:
pinch of jalapeno peppers, chopped 
1 Tbs. plain Greek yogurt
Green onions for garnish • Cook & shred the chicken. Cook brown rice according to the directions on the package. Sauté the red peppers and onions in a pan until tender. Set aside. • Combine the salsa and the chicken together. On a plate layer: shredded lettuce, cooked rice, salsa chicken, black beans, sautéed peppers and onions, olives, avocado, yogurt, jalapenos and green onions. Enjoy!
