Thai Chicken Pizza


Makes 1 pizza. Serving size 1/4 of pizza.
350 cals | 15g fat | 29g carb | 25g protein
Dough:
1-1/2 cups Kodiak Power Cakes Mix
2 Tbs. olive oil
6 Tbs. warm water
Sauce:
1/4 cup salsa
2 Tbs. peanut butter
1 tsp. Honey
1 tsp. Coconut aminos or soy sauce
Toppings:
1/2 cup chicken, cooked & chopped
1 cup Shredded carrots
Handful spinach, chopped
1/4 cup red onions, chopped or sliced
1/2 cup shredded mozzarella cheese
Green onions
Cilantro
1 Tbs. chopped peanuts
1. Preheat oven to 450 degrees.
2. Mix Kodiak Cakes with oil and water until well combined. Should be a little sticky. Add more water if it seems too dry. Form into a ball. Place on a baking sheet lined with parchment paper and roll out into a circle.
3. Blend all sauce ingredients in a blender until smooth or stir together for a more chunky texture. Spread sauce over dough.
4. Sprinkle half of cheese over sauce and layer spinach, chicken, carrots, red onion and other half of sauce. Bake for 10 minutes.
5. Top with cilantro, green onions & chopped peanuts. Slice & enjoy!! 😋 *** to lower the fat & calorie content, make sauce with powdered peanut butter instead of the real stuff. Add water until you reach a good consistency 👍🏻

Chicken Alfredo Pizza



Yay for my first post.  Sorry I have been out of it.  I made this tonight and it was sooo yummy.  We ate all but one piece.  It is also supposed to be verily healthy (I guess as far as pizza goes).


  • 2 1/4 T quick-rise yeast
  • 1 cup warm water 
  • 1 teaspoon sugar
  • 1-1/2 teaspoons salt, divided
  • 2-1/2 all-purpose flour
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced (Or 1 T Garlic Powder)
  • 2 tablespoons butter
  • 1 teaspoon dried parsley flakes
  • 1/4 teaspoon pepper
  • 4-1/2 teaspoons all-purpose flour
  • 1-1/2 cups 2% milk
  • 3 cups cubed cooked chicken breasts
  • 2 large tomatoes, chopped
  • 2 cups chopped fresh baby spinach
  • 4 cups (16 ounces) shredded part-skim mozzarella cheese
  • 1/2 cup shredded Mozzarella cheese
  • 1 teaspoon Italian seasoning

Directions

  • In a large bowl, dissolve yeast in warm water. Add the sugar, 1/2 teaspoon salt and 2-1/2 cups flour. Beat until smooth. (dough will be sticky).
  • Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 10 minutes.
  • Sprinkle flour over two 12-in. pizza pans coated with cooking spray. Divide dough in half. On a floured surface, roll each portion into a 13-in. circle. Transfer to prepared pans. Build up edges slightly. Prick dough thoroughly with a fork; brush with oil. Bake at 425° for 5 minutes or until edges are lightly browned.
  • In a small saucepan, saute garlic in butter until tender. Stir in the parsley, pepper and remaining salt. Combine flour and milk until smooth. Stir into pan. Bring to a boil; cook and stir for 2 minutes or until slightly thickened.
  • Spread over crusts; top with chicken, tomatoes, spinach, cheeses and Italian seasoning. Bake 10-12 minutes longer or until crusts are lightly browned and cheeses are melted. Yield: 2 pizzas (6 slices each).
